and wash in cold water.<br \/>Now marinate the kale with a little neutral oil and a good pinch of salt and bake in the oven at 175 \u00b0C (fan oven) for approx. 20\u201325 minutes until crispy.<\/p><p>For the kale oil, heat approx. 400 ml of cold-pressed rapeseed oil in a saucepan to approx. 80 \u00b0C. Now mix fresh kale (approx. 100 g) into the oil until everything is finely chopped.<br \/>(alternatively in the Thermomix: speed 6, 80 \u00b0C, 7 minutes).<br \/>Then pass the oil through a fine sieve or cloth.<\/p><p>Peel the quinces and cut them into cubes. Marinate them in a saucepan with a little cardamom and brown sugar and leave to stand for at least 4 hours.<br \/>Then place the pot on low heat with the lid on for 75 minutes, stirring occasionally.<br \/>Then blend with a hand blender.<\/p><p>Quarter the Hokkaido pumpkin and remove the seeds with a spoon.<br \/>Use a melon baller to scoop small pearls out of the pumpkin.<br \/>(Alternatively, cut the pumpkin into thin slices).<\/p><p>Marinate the pearls with a little honey, salt and high-quality white wine vinegar and leave to infuse for at least 2 hours \u2013 the longer, the more aromatic.<\/p><p>Place the pumpkin pieces in a juicer or slow juicer.<br \/>Season the broth with a little stock from the pumpkin pearls and a pinch of pepper, then add the kale oil.<\/p><p>Now place a generous portion of quince pur\u00e9e in a deep plate.<br \/>Spread the baked kale on top and garnish with the pumpkin pearls.<br \/>Finish with a few spoonfuls of the vinaigrette and serve.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>","protected":false},"excerpt":{"rendered":"<p>Gr\u00fcnkohl | K\u00fcrbis | Quitte Frischen Gr\u00fcnkohl vom Stiel zupfen und in kaltem Wasser waschen.Den Gr\u00fcnkohl nun mit etwas neutralem \u00d6l und einer guten Prise Salz marinieren und im Ofen bei 175 \u00b0C Umluft f\u00fcr ca. 20\u201325 Minuten kross backen.
