The visionary gastro couple Lennart Röbbel, chef and owner, and Lisa Dismer, restaurant manager and sommelier, coined the term "vegetable cuisine" and were awarded 4 out of 5 radishes in the 'We are smart' guide in 2023 and are listed among the best 1200 vegetarian restaurants worldwide.
The term 'vegan' hardly does justice to the plant-based cuisine at Rüpel. The plant-based tasting menu changes according to the seasons and depends entirely on the harvest from the wonderful farmers and producers in the Hanover region. The Rüpel strives for the highest quality of ingredients, the selection of drinks and at the same time the least waste of food thanks to old preservation methods.
